We take a lovely local ham, brine it in molasses, salt, and spices, then smoke it slowly and glaze it with more molasses and dry mustard. Beautifully pink, tender, smoky. Delicious heated for serving on a dinner plate, or slicing thin for sandwiches and biscuits.
